Decide whether you need more capacity or a distinct service
An extension may make sense when the hotel retains the main drinks plan but needs an additional staffed position for a concentrated reception. It still requires agreement on stock, equipment, glassware and the boundary between teams.
A separate cocktail bar can serve a specific room or evening period while the hotel handles wine, beer or dinner drinks elsewhere. Guests should understand which drinks are available at each position. Write down responsibilities rather than assuming that either arrangement includes the full event drinks service.
